Friday Lush: Umbongo

Hands up if you read that title and now have the 80s classic juice-in-a-carton advert jingle stuck in your head. Yes, me too.  Sorry about that.

I was kindly given this recipe by the Roseleaf in Leith, it’s one of my favourite boozers and their cocktails, or pot-tails, are inventive and quirky, so it seemed natural to ask if they’d share one with the Friday Lush.

The sun is shining a treat today where I am so this one, made with Pimm’s, that classic British summertime drink, seems perfect for the occasion.  It’s half-term for me too so never too early to be at least thinking about cocktails.

What you will need

  • 50ml Pimm's
  • 125ml passion fruit juice
  • 50ml soda water
  • 4 mint leaves (torn)
  • 1 Slice orange
  • 1 Ribbon cucumber
  • 1 sprig mint
  • ice cubes


Step 1 Put the ice in a glass or tea cup
Step 2 Pour in the Pimm's, top with passion fruit juice and soda water
Step 3 Garnish with orange, cucumber and a sprig of mint
