Friday Lush: Brown Eyed Girl

I know it’s not Friday, but we can live in hope, my friends.  No, this is a St. Patrick’s Day inspired Lush so we’re a couple of days early here.  I hope you’ll forgive me?  I’ll make you one of these if you take too much umbrage.

This is another cocktail from the creative types at Malt & Bass cocktail bar in my home town of Corby, Northamptonshire.  Created for St. Patrick’s Day and available this week from the bar.  It’s dark and sweet, like Van Morrison’s brown eyed girl, and I think that one after dinner would be quite the thing.  Make it with spiced rum,  Sailor Jerry or Kraken to cut through the chocolate liqueur and syrup and top it up generously with Guinness.  I can imagine Molly Bloom being wooed with one of these by her suitors, as Leopold embarked on his Dublin odyssey.

I wonder if Van the Man will mind me stealing the name?

Brown Eyed Girl

Serves 1
Prep time 2 minutes
Meal type Beverage

What you will need

  • 25ml spiced rum (Sailor Jerry or Kraken)
  • 25ml chocolate liqueur (Thornton's)
  • 25ml chocolate syrup (Monin)
  • 125ml Guinness
  • cocoa powder (to dust)
  • ice

Instructions

Step 1 Add ice to a cocktail shaker and pour everything, bar the cocoa powder, in.
Step 2 Shake for 20 seconds, strain into a champagne coupe and leave to settle, as you would a pint of Guinness. Dust with cocoa
Step 3 Happy St. Patrick's Day!
